Ingredients

  • 3 large Bananas (ripe, mashed)
  • 120 milliliters Pure maple syrup
  • 75 grams Unsalted butter (melted)
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 50 milliliters Milk
  • 75 grams Optional: Chopped walnuts or chocolate chips

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large bowl, mash the ripe bananas with a fork until smooth.

Step 3

Add the maple syrup, melted butter, eggs, and vanilla extract to the mashed bananas. Whisk until the mixture is well combined.

Step 4

In a separate bowl, sift together the flour, baking powder, baking soda, salt, and ground cinnamon.

Step 5

Gradually fold the dry ingredients into the wet ingredients, mixing gently until just combined. Avoid overmixing to keep the muffins soft and tender.

Step 6

Stir in the milk to loosen the batter. If you're adding walnuts or chocolate chips, fold them in at this stage.

Step 7

Divide the batter evenly between the 12 muffin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Enjoy your Maple Syrup Banana Muffins with a cup of coffee or tea!
