Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 0.25 cups pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon low-sodium soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet or roasting pan with aluminum foil or parchment paper for easier cleanup.

Step 2

In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, olive oil, minced garlic, thyme leaves (if using), salt, pepper, and lemon juice.

Step 3

Pat the chicken thighs dry with paper towels. This will help the skin crisp up during roasting. Place the chicken thighs on the prepared baking sheet, skin-side up.

Step 4

Brush a generous amount of the maple glaze over each chicken thigh, reserving about 1/3 of the glaze for basting later.

Step 5

Roast the chicken thighs in the preheated oven for 20 minutes. Remove the pan from the oven and brush the chicken with more of the maple glaze.

Step 6

Return the chicken to the oven and roast for an additional 15-20 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C) and the skin is golden and caramelized.

Step 7

If desired, switch the oven to broil for the last 2-3 minutes of cooking to achieve extra crispy edges. Keep a close eye to prevent burning.

Step 8

Remove the chicken from the oven and let it rest for 5 minutes before serving. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp green salad.
