Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Ground cinnamon
  • 0.75 cups Raisins
  • 0.5 cups Pure maple syrup
  • 0.25 cups Brown sugar
  • 0.5 cups Unsalted butter, melted
  • 1 teaspoons Vanilla extract
  • 2 Eggs
  • 0.5 cups Milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Stir in the raisins and toss to coat them in the dry mixture.

Step 3

In a medium-sized bowl, whisk together the maple syrup, brown sugar, melted butter, and vanilla extract. Add the eggs, one at a time, whisking well after each addition.

Step 4

Pour the milk into the wet ingredients and mix until fully combined.

Step 5

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be lumpy.

Step 6

Divide the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Step 7

Bake in the preheated oven for 18–20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy the delicious maple raisin flavors!
