Ingredients

  • 1 cup Rolled oats
  • 1 cup Boiling water
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water (110°F/43°C)
  • 0.25 cup Maple syrup
  • 3 tablespoons Unsalted butter (melted)
  • 1.5 teaspoons Salt
  • 3.5 cups All-purpose flour
  • 2 tablespoons Rolled oats (for topping)

Directions

Step 1

In a large mixing bowl, combine the rolled oats and boiling water. Stir and let the mixture sit for 10 minutes to soften the oats.

Step 2

In a small bowl, dissolve the active dry yeast in the warm water. Let it sit for 5 minutes until it becomes frothy.

Step 3

Add the yeast mixture, maple syrup, melted butter, and salt to the softened oats and stir to combine.

Step 4

Gradually add the all-purpose flour, 1 cup at a time, stirring with a wooden spoon or using the dough hook on a stand mixer. The dough should come together and pull away from the sides of the bowl.

Step 5

Turn the dough onto a floured surface and knead for 8-10 minutes (or knead in the stand mixer for 5-7 minutes) until it becomes smooth and elastic. Add a little extra flour if the dough is too sticky.

Step 6

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm area for 1 to 1.5 hours, or until doubled in size.

Step 7

Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan.

Step 8

Brush the top of the loaf with a bit of water and sprinkle the rolled oats on top for added texture.

Step 9

Cover the pan loosely with the towel and let the loaf rise again for 30-45 minutes, or until it has risen just above the edges of the pan.

Step 10

Preheat your oven to 375°F (190°C).

Step 11

Bake the bread for 35-40 minutes, or until it sounds hollow when tapped on the bottom and the top is golden brown.

Step 12

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
