Ingredients

  • 4 pieces bone-in pork chops (about 1 inch thick)
  • 0.25 cups maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic cloves, minced
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon fresh thyme leaves (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt and black pepper. Set them aside while you prepare the sauce.

Step 2

In a small mixing bowl, whisk together the maple syrup, Dijon mustard, whole-grain mustard, soy sauce, and 1 tablespoon of olive oil until well combined.

Step 3

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the pork chops and sear them for 3-4 minutes on each side until golden brown. Remove the pork chops from the skillet and set them aside.

Step 4

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant.

Step 5

Pour the maple mustard sauce into the skillet, stirring to combine with the garlic. Let the sauce simmer for 1-2 minutes to slightly reduce and thicken.

Step 6

Return the pork chops to the skillet, spooning the sauce over them to coat. Cover the skillet with a lid and let the pork chops cook for an additional 6-8 minutes, or until they reach an internal temperature of 145°F (63°C).

Step 7

Remove the pork chops from the skillet and let them rest for 5 minutes before serving. Spoon additional sauce from the skillet over the pork chops and garnish with fresh thyme leaves, if desired.

Step 8

Serve warm with your favorite side dishes, such as mashed potatoes or roasted vegetables.
