Ingredients

  • 0.5 cup Rolled oats
  • 1 cup Water
  • 0.5 cup Unsweetened almond milk (or milk of choice)
  • 3 large eggs equivalent Egg whites
  • 1 tablespoon Maple syrup
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Ground cinnamon
  • 0.125 teaspoon Salt
  • 0 optional Fresh fruit or nuts of choice (optional, for topping)

Directions

Step 1

In a small saucepan, combine the rolled oats, water, almond milk, cinnamon, and salt. Stir well to combine.

Step 2

Place the saucepan over medium heat and cook the oats, stirring occasionally, until they begin to thicken, about 3-4 minutes.

Step 3

Reduce the heat to low. Slowly pour in the egg whites while stirring the oatmeal continuously to prevent the egg whites from clumping. Cook for another 2-3 minutes until the egg whites are fully incorporated and the oatmeal becomes creamy.

Step 4

Remove the saucepan from heat, and stir in the maple syrup and vanilla extract.

Step 5

Transfer the oatmeal to a serving bowl and let it cool for 1-2 minutes. The oatmeal will thicken slightly as it cools.

Step 6

Top with fresh fruit, nuts, or additional maple syrup if desired, and enjoy your Maple Egg White Oatmeal warm!
