Ingredients

  • 2 pieces (about 1 lb each) Pork tenderloin
  • 0.33 cup Maple syrup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Curry powder
  • 0.5 teaspoon Smoked paprika
  • 1 tablespoon Soy sauce
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.

Step 2

Trim any silver skin from the pork tenderloins and pat them dry with paper towels. Set the tenderloins aside.

Step 3

In a small mixing bowl, whisk together the maple syrup, Dijon mustard, curry powder, smoked paprika, soy sauce, minced garlic, olive oil, salt, and black pepper until well combined.

Step 4

Place the pork tenderloins on the prepared baking sheet and brush the maple curry marinade generously over them, reserving a little marinade for basting later.

Step 5

Let the pork sit at room temperature for about 10-15 minutes to allow the flavors to penetrate the meat.

Step 6

Place the baking sheet in the preheated oven and roast the pork for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C) for medium. Baste the pork with the reserved marinade halfway through cooking.

Step 7

Once cooked, remove the pork from the oven and tent it with foil. Allow the meat to rest for 5-10 minutes to retain its juices.

Step 8

Slice the pork tenderloin into medallions and transfer to a serving platter. Garnish with fresh cilantro if desired.

Step 9

Serve warm with your choice of sides, such as roasted vegetables, rice, or mashed potatoes.
