Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 3 tbsp Soy sauce
  • 3 tbsp Maple syrup
  • 1 tbsp Cornstarch
  • 2 tbsp Sesame oil
  • 3 Garlic cloves, minced
  • 1 tsp Fresh ginger, minced
  • 1 Red bell pepper, sliced
  • 2 cups Broccoli florets
  • 1 Carrot, julienned
  • 2 Green onions, sliced
  • 4 cups Cooked rice or noodles (optional, for serving)

Directions

Step 1

Slice the chicken into thin strips and set aside.

Step 2

In a small bowl, mix together 2 tablespoons of soy sauce, 2 tablespoons of maple syrup, and the cornstarch. Set aside to use as the stir-fry sauce.

Step 3

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Step 4

Add the chicken strips to the skillet and cook for 4-6 minutes, or until fully cooked through. Remove the chicken and set aside on a plate.

Step 5

In the same skillet, add the remaining tablespoon of sesame oil, minced garlic, and minced ginger. Sauté for about 30 seconds until fragrant.

Step 6

Add the red bell peppers, broccoli florets, and julienned carrots to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are crisp-tender.

Step 7

Return the cooked chicken to the skillet and pour in the reserved stir-fry sauce. Stir well to coat and simmer for 2-3 minutes until the sauce thickens.

Step 8

Add the remaining 1 tablespoon of soy sauce and 1 tablespoon of maple syrup for extra flavor if desired. Stir to combine.

Step 9

Garnish the stir-fry with sliced green onions and serve hot over cooked rice or noodles, if using.
