  • 3 tablespoons Maple syrup
  • 0.25 cup Fresh cilantro, chopped
  • 0 None Sour cream (optional, for serving)
  • 0 None Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with salt and black pepper. Add to the pot and sear for 4–5 minutes on each side until golden brown. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion, garlic, red bell pepper, and jalapeño. Sauté for 4–5 minutes until softened.

Step 4

Stir in the chili powder, ground cumin, and smoked paprika. Cook for 1 minute to toast the spices.

Step 5

Add the canned diced tomatoes (with their juices), kidney beans, black beans, and chicken broth. Stir to combine.

Step 6

Return the seared chicken breasts to the pot. Bring the mixture to a simmer and lower the heat to medium-low. Cover and cook for 20 minutes.

Step 7

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the chili.

Step 8

Stir in the maple syrup and let the chili cook uncovered for an additional 10 minutes to thicken slightly and allow the flavors to meld.

Step 9

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 10

Ladle the chili into bowls and garnish with chopped cilantro. Serve with optional toppings like sour cream and shredded cheddar cheese, if desired.
