  • 200 grams raw cashews
  • 120 ml pure maple syrup
  • 0.5 teaspoons sea salt
  • 40 grams rolled oats
  • 1 teaspoons vanilla extract
  • 2 tablespoons coconut oil
  • 100 grams dark chocolate chips
  • 50 grams chopped dried cranberries

Directions

Step 1

Line an 8x8-inch pan with parchment paper and set aside.

Step 2

In a food processor, blend the raw cashews until they form a smooth cashew butter. This may take 5-7 minutes, scraping down the sides as needed.

Step 3

In a small saucepan over low heat, combine the maple syrup, sea salt, and coconut oil. Stir until the coconut oil is melted and the mixture is well combined, about 2 minutes. Remove from heat and stir in the vanilla extract.

Pour the maple syrup mixture into the food processor with the cashew butter. Blend until fully incorporated.
