Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter (cold, cubed)
  • 50 grams Granulated sugar
  • 1 large Egg yolk
  • 2 tablespoons Cold water
  • 200 grams Cream cheese (softened)
  • 120 ml Pure maple syrup
  • 120 ml Heavy cream
  • 50 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 100 grams Pecans (toasted and chopped)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 6-cup tartlet pan or line with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour and granulated sugar. Add the cold, cubed butter and rub the mixture together using your fingertips until it resembles breadcrumbs.

Step 3

Add the egg yolk and cold water to the flour mixture. Mix gently until a dough forms. Be careful not to overmix. Wrap the dough in cling film and chill in the refrigerator for 20 minutes.

Step 4

Roll out the chilled dough on a lightly floured surface to about 3mm thickness. Cut circles slightly larger than the tartlet molds and carefully press the dough into each mold. Trim the edges with a knife.

Step 5

Prick the base of each tart shell with a fork to prevent puffing, then line each tart with a small piece of parchment paper and fill with baking beans or rice. Blind bake for 10 minutes. Remove the weights and parchment, then bake for an additional 5 minutes until golden brown. Let the shells cool completely.

Step 6

In a separate bowl, beat the softened cream cheese until smooth. Add the maple syrup, powdered sugar, and vanilla extract, stirring until fully combined.

Step 7

In another bowl, whisk the heavy cream until soft peaks form. Fold the whipped cream into the maple and cream cheese mixture until smooth and creamy.

Step 8

Spoon the creamy filling evenly into the cooled tartlet shells, smoothing the tops with the back of a spoon or an offset spatula.

Step 9

Top each tartlet with a generous sprinkle of toasted and chopped pecans. Chill the tartlets in the refrigerator for at least 1 hour before serving.

Step 10

Serve chilled and enjoy these rich, creamy, and nutty delights!
