Ingredients

  • 450 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 150 grams butter (cold, cubed)
  • 100 grams sugar
  • 150 grams mixed berries (blueberries, raspberries, blackberries, or cranberries)
  • 250 milliliters buttermilk
  • 1 piece egg (beaten, for glaze)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, baking powder, and salt.

Step 3

Add the cold cubed butter to the bowl. Using your fingertips or a pastry cutter, rub the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the sugar and the mixed berries, ensuring the berries are evenly distributed.

Step 5

Make a well in the center of the mixture and pour in the buttermilk. Use a wooden spoon to gently bring the mixture together until a soft dough forms. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface. Shape it into a round disc about 3 cm (1.2 inches) thick. Transfer the disc to the prepared baking sheet.

Step 7

Brush the top of the dough with the beaten egg to give it a golden color when baked.

Step 8

Using a sharp knife, score a shallow cross over the top of the dough to help it bake evenly and resemble traditional bonnag.

Step 9

Bake in the preheated oven for 30 minutes, or until the bonnag is golden brown and a skewer inserted into the center comes out clean.

Step 10

Remove from the oven and allow to cool slightly on a wire rack before slicing. Serve warm or at room temperature with butter, jam, or a dollop of clotted cream.
