Ingredients

  • 500 grams All-purpose flour
  • 2 large Eggs
  • 120 milliliters Water
  • 1 teaspoon Salt
  • 250 grams Ground lamb or beef
  • 1 medium, finely chopped Onion
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 250 grams Plain yogurt
  • 2 crushed Garlic cloves
  • 50 grams Butter
  • 0.5 teaspoon Sumac
  • 1 teaspoon, dried Mint leaves
  • 1 teaspoon, for yogurt sauce Salt
  • 2 liters, for boiling Water

Directions

Step 1

In a large bowl, combine flour and salt. Make a well in the center and add eggs and water.

Step 2

Mix the ingredients and knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

Step 3

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Step 4

In another bowl, combine ground lamb or beef with finely chopped onion, salt, black pepper, and paprika.

Divide the dough into four equal parts. Roll out each portion into a thin sheet, about 1mm thick.

Cut the dough into small squares, approximately 4x4 cm.

Place a small amount (about a teaspoon) of the meat mixture in the center of each square.

Fold the four corners of the square over the meat to form small packets, pinching the edges to seal firmly.

Bring a pot of 2 liters of salted water to a boil.

Carefully place the manti into the boiling water and cook for about 8-10 minutes or until they float and the meat inside is cooked through.

In the meantime, prepare the yogurt sauce by mixing yogurt with crushed garlic and a teaspoon of salt.

For the butter sauce, melt butter in a small pan and add sumac and dried mint. Stir well and cook for 1-2 minutes.

Drain the cooked manti and transfer to a serving plate.

Serve with a generous spoonful of garlic yogurt sauce and a drizzle of the butter mint sauce on top.
