Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 3 Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 2 cups Ricotta cheese
  • 1 cup Frozen spinach (thawed and squeezed dry)

  • 2 cups Shredded mozzarella cheese
  • 1 Egg (for filling)
  • 0.5 teaspoons Garlic powder
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 3 cups Marinara sauce
  • 1 teaspoons Olive oil (to grease pan)

Directions

Step 1

In a blender or mixing bowl, combine all-purpose flour, milk, eggs, and melted butter. Blend or whisk until smooth to create the crepe batter. Chill for 20 minutes.

While the batter rests, prepare the filling. In a medium bowl, mix ricotta cheese, spinach, Parmesan cheese, 1 cup of mozzarella, one egg, garlic powder, salt, and black pepper. Stir until fully combined and set aside.

Heat a nonstick skillet over medium heat and lightly grease with olive oil. Pour 1/4 cup of the crepe batter into the pan and swirl to create a thin, even layer. Cook for 1-2 minutes until the edges lift easily, then flip and cook for another 30 seconds. Transfer to a plate. Repeat with the remaining batter to make about 12 crepes.

Step 4

Preheat the oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish.
