  • 2 whole ripe mangoes
  • 8 sheets rice paper wrappers
  • 1 medium carrots
  • 1 medium cucumber
  • 20 leaves fresh mint leaves
  • 10 sprigs cilantro
  • 2 tablespoons lime juice
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 2 tablespoons water

Directions

Step 1

Peel the mangoes and slice them into thin, even strips.

Julienne the carrots and cucumber into matchstick-like pieces.

Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable.
