Ingredients

  • 1 whole ripe mango
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Peel and pit the mango. Cut the flesh into small cubes.

Step 2

In a blender, combine the mango cubes, olive oil, lime juice, apple cider vinegar, honey, and Dijon mustard.

Season the vinaigrette with salt and black pepper to taste.

Step 5

Blend again briefly to ensure all ingredients are fully incorporated.

Step 6

Transfer the vinaigrette to a sealed jar or bottle and refrigerate until ready to use. Shake well before serving.
