Ingredients

  • 4 pieces Whole wheat tortillas
  • 1 large Ripe mango
  • 1 medium Carrot

  • 1 large Avocado
  • 0.25 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil

  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel and slice the mango into thin strips.

Step 2

Julienne the carrot, cucumber, and red bell pepper into thin matchstick-like pieces.

Step 3

Rinse and pat dry the baby spinach and fresh cilantro.

Step 4

Slice the avocado in half, remove the pit, and carefully scoop out the flesh. Mash the avocado in a small bowl until smooth.
