Ingredients

  • 3 large Ripe mangoes
  • 150 grams Granulated sugar
  • 50 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
  • 1 sheet Pre-rolled puff pastry
  • 1 tablespoon All-purpose flour
  • 0 Whipped cream or ice cream (optional, for serving)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Peel the mangoes and slice them into thick, even wedges. Set aside.

Step 3

In an oven-proof skillet (approx. 25 cm or 10 inches in diameter), add the sugar and place over medium heat. Allow the sugar to melt and caramelize, swirling the pan occasionally to ensure even melting. This should take about 5–7 minutes. Be careful not to stir the sugar as it melts to avoid crystallization.

Step 4

Once the sugar has turned a deep amber color, carefully add the butter and stir with a heat-resistant spatula until fully combined.

Step 5

Add the mango wedges to the caramel in a circular pattern, slightly overlapping if necessary. Cook for about 2 minutes, gently spooning the caramel over the mangoes.

Step 6

Remove the skillet from heat and drizzle the vanilla extract and lemon juice over the mangoes.

Step 7

Lightly flour your work surface and roll out the puff pastry if needed to ensure it covers the skillet. Carefully place the puff pastry over the mangoes, tucking the edges of the pastry into the skillet to encase the filling.

Step 8

Using a fork, prick a few small holes in the pastry to allow steam to escape during baking.

Step 9

Transfer the skillet to the preheated oven and bake for 25–30 minutes, or until the puff pastry is golden and puffy.

Step 10

Remove the skillet from the oven and let it rest for 5 minutes. Place a large serving plate or platter over the skillet and invert the tarte tatin onto the plate carefully to avoid spills.

Step 11

Serve the Mango Tarte Tatin warm, optionally paired with whipped cream or a scoop of ice cream for extra indulgence.
