Ingredients

  • 500 grams large shrimp, peeled and deveined
  • 1 large ripe mango, diced
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons cooking oil
  • 0.5 teaspoon red chili flakes (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups white or jasmine rice (optional, for serving)

Directions

Step 1

In a small bowl, combine lime juice, soy sauce, honey, minced garlic, grated ginger, and red chili flakes (if using). Mix well and set aside as the marinade.

Step 2

Place the peeled and deveined shrimp in a large bowl. Pour half of the marinade over the shrimp and toss to coat. Reserve the remaining marinade for later.

Step 3

Heat 2 tablespoons of cooking oil in a large skillet or wok over medium-high heat.

Once the oil is hot, add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until the shrimp turn pink and are fully cooked. Remove shrimp from the skillet and set aside.
