Ingredients

  • 4 pieces Flour tortillas (8-inch)
  • 1 large Ripe mango
  • 1 cup Shredded Monterrey Jack cheese
  • 2 tablespoons Fresh cilantro
  • 0.25 cup Red onion, finely sliced
  • 2 tablespoons Butter
  • 1 piece Fresh lime (optional, for serving)

Directions

Step 1

Peel the mango, cut the flesh away from the pit, and dice it into small, bite-sized pieces. Set aside.

Step 2

Finely chop the fresh cilantro and prepare the red onion by slicing it thinly.

Step 3

Lay out the tortillas on a flat surface. Sprinkle 2 tablespoons of shredded Monterrey Jack cheese evenly over one half of each tortilla.

Step 4

Top the cheese with diced mango, a small amount of red onion, and chopped cilantro. Be careful not to overstuff the tortilla.

Step 5

Fold the other half of the tortilla over the filling to create a half-moon shape.

Step 6

Heat a skillet over medium heat and add 1/2 tablespoon of butter. Allow it to melt and coat the pan evenly.

Step 7

Place one of the folded tortillas in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining quesadillas, adding more butter to the skillet as needed.

Step 8

Once cooked, transfer the quesadillas to a cutting board and let them cool slightly before slicing them into wedges.

Step 9

Serve warm, with lime wedges on the side if desired for an added burst of freshness.
