Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 0.5 cup Mango chutney
  • 2 tbsp Fresh cilantro (chopped)
  • 2 cloves Garlic (minced)
  • 0.25 tsp Red chili flakes
  • 2 tbsp Fresh lime juice

Directions

Step 1

Trim any excess fat and silver skin from the pork tenderloin. Slice it into 1-inch-thick medallions.

Step 2

Season the pork medallions evenly with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the pork medallions in a single layer. Sear for 2-3 minutes on each side until golden brown and cooked through (145°F internal temperature). Transfer the medallions to a plate and cover to keep warm.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil.

Add the minced garlic and red chili flakes to the skillet. Stir and cook for about 30 seconds until fragrant.
