Ingredients

  • 2 racks Pork ribs
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 2 large Mangoes (ripe)
  • 3 tablespoons Honey
  • 1 cup Ketchup
  • 2 tablespoons Soy sauce
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Chili flakes (optional)

Directions

Step 1

Preheat the oven to 275°F (135°C).

Step 2

Remove the membrane from the back of the pork ribs and pat them dry with paper towels.

Step 3

In a small bowl, mix salt, black pepper, smoked paprika, and garlic powder. Rub this seasoning mixture evenly over both sides of the ribs.

Step 4

Wrap the seasoned ribs tightly in aluminum foil and place them on a baking sheet, bone-side down. Bake in the oven for 2.5 hours until the ribs are tender.

Step 5

While the ribs are baking, prepare the mango barbecue sauce. Peel and dice the mangoes, then puree them in a blender until smooth.

Step 6

In a saucepan, heat olive oil over medium heat. Add the mango puree, ketchup, honey, soy sauce, apple cider vinegar, grated ginger, and chili flakes (if using). Simmer for 10–12 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.

Step 7

Once the ribs are done baking, carefully remove them from the oven and unwrap the foil. Brush both sides of the ribs generously with the mango barbecue sauce.

Step 8

Preheat your grill to medium-high heat. Place the sauced ribs on the grill and cook for 5–7 minutes per side, brushing with additional sauce as needed and achieving a slight char.

Step 9

Remove the ribs from the grill and let them rest for 5 minutes before slicing.

Step 10

Serve hot with extra mango barbecue sauce on the side.
