Ingredients

  • 8 pieces Chicken thighs (bone-in, skin-on)
  • 2 cups Fresh mango (ripe, peeled, and diced)
  • 0.5 cups Ketchup
  • 0.25 cups Brown sugar
  • 2 tablespoons Soy sauce
  • 2 tablespoons White vinegar
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoons Chili powder
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro (chopped, for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

In a medium saucepan over medium heat, combine the diced mango, ketchup, brown sugar, soy sauce, white vinegar, minced garlic, grated ginger, smoked paprika, and chili powder.

Step 2

Cook the mango mixture for about 8-10 minutes, stirring frequently, until the mango softens and the sauce thickens slightly.

Step 3

Remove the saucepan from heat and let the sauce cool for a few minutes. Use a blender or an immersion blender to puree the sauce until smooth. Set aside half of the mango barbecue sauce for basting and save the rest for serving.

Step 4

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

Step 5

Pat the chicken thighs dry with paper towels, then rub them with olive oil. Season the chicken evenly with salt and black pepper.

Step 6

Place the chicken thighs on the grill, skin side down. Cook for about 6 minutes on each side, flipping once, until they are golden brown and have visible grill marks.

Step 7

Reduce the grill heat to medium. Brush the chicken thighs generously with half of the mango barbecue sauce and continue to cook for an additional 8-10 minutes, flipping and basting occasionally, until the internal temperature of the chicken reaches 165°F (74°C).

Step 8

Remove the chicken from the grill and let it rest for 5 minutes to lock in the juices.

Step 9

Garnish the chicken with freshly chopped cilantro and serve with lime wedges and the reserved mango barbecue sauce on the side.
