Ingredients

  • 2 links Andouille sausage
  • 1 large Mango
  • 1 medium Bell pepper (red or yellow)

  • 1 small Red onion

  • 2 tablespoons Honey
  • 1 tablespoon Lime juice
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Chili flakes (optional, for spice)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 stalks Green onion (for garnish)
  • 4 cups Cooked jasmine rice (optional, for serving)

Directions

Step 1

Slice the andouille sausage into coin-shaped pieces. Peel and dice the mango into small cubes. Thinly slice the bell pepper and red onion. Mince the garlic and grate the ginger. Slice the green onions for garnish and set aside.

In a small bowl, whisk together the soy sauce, honey, lime juice, and chili flakes (if using). Set the sauce aside.
