Ingredients

  • 4 pieces salmon fillets
  • 4 whole mandarin oranges
  • 2 tablespoons unsalted butter
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low sodium)
  • 2 cloves garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, chopped (for garnish)
  • 1 teaspoon toasted sesame seeds (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Season the salmon fillets with salt and black pepper, then drizzle with olive oil. Rub the oil and seasoning evenly over the fillets. Set them aside.

Step 3

Juice three of the mandarin oranges into a small bowl and set the juice aside. Peel the fourth mandarin orange, separate it into segments, and reserve the segments for garnish.

Step 4

In a small saucepan, melt the butter over medium heat. Add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

Step 5

Stir in the mandarin orange juice, honey, and soy sauce. Increase the heat slightly and let the mixture simmer for 3-4 minutes, stirring occasionally, until it thickens slightly into a glaze.

Step 6

Place the salmon fillets on the prepared baking sheet, skin-side down if applicable. Brush the mandarin glaze generously over each fillet, reserving a small amount of glaze for later.

Step 7

Bake the salmon in the preheated oven for 18-20 minutes, or until the salmon is opaque and flakes easily with a fork.

Step 8

While the salmon is baking, prepare the garnish by chopping the green onions and toasting the sesame seeds if using.

Step 9

Once the salmon is cooked, remove it from the oven and brush it with the remaining mandarin glaze. Garnish with the reserved mandarin orange segments, chopped green onions, and toasted sesame seeds.

Step 10

Serve the mandarin salmon immediately with your choice of side dishes, such as steamed rice, quinoa, or a fresh green salad. Enjoy!
