Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 6 cups Mixed salad greens
  • 1 cup Mandarin oranges (canned, drained or fresh segments)
  • 0.5 cup Sliced almonds
  • 2 stalks Green onions
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Toasted sesame oil
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Ginger (grated)

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for 5 minutes, then slice into thin strips.

Step 3

While the chicken is cooking, prepare the sesame dressing by whisking together soy sauce, rice vinegar, honey, toasted sesame oil, minced garlic, and grated ginger in a small bowl. Set aside.

Step 4

Chop the green onions into thin slices. If using fresh mandarin oranges, peel and segment them.

Step 5

In a large salad bowl, combine the mixed salad greens, mandarin oranges, sliced almonds, sesame seeds, and chopped green onions.

Step 6

Add the sliced chicken on top of the salad mixture.

Step 7

Drizzle the sesame dressing over the salad and toss gently to combine. Adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve immediately and enjoy your Mandarin Orange Chicken Salad!
