Peel the mandarins, removing as much of the white pith as possible, and set the peels aside. Slice each mandarin into quarters and remove any visible seeds.

Thinly slice the reserved mandarin peels into fine strips, ensuring to only use the bright orange part of the peel and discard any remaining white pith.
