Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional)
  • 0.5 cup ketchup (for glaze)
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, Worcestershire sauce, ketchup, Dijon mustard, egg, salt, black pepper, and parsley if using.

Step 3

Use your hands to gently mix everything together until just combined. Be careful not to overmix, as this can result in a dense meatloaf.

Step 4

Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, approximately 9x5 inches in size, if not using a loaf pan.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze. Spread half of the glaze evenly over the top of the meatloaf.

Step 6

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 7

After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with your favorite sides, such as mashed potatoes or steamed vegetables.
