Ingredients

  • 1000 grams Potatoes
  • 2 large Onions
  • 4 whole Garlic cloves
  • 60 ml Olive oil
  • 2 whole Fresh rosemary sprigs
  • 10 grams Fresh parsley
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 250 ml Vegetable stock

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Peel the potatoes and slice them thinly, around 3-4mm thick. Use a mandoline slicer if available for uniform thickness.

Step 3

Peel and thinly slice the onions. Peel the garlic cloves and leave them whole.

Step 4

In a large mixing bowl, combine the sliced potatoes, onions, garlic cloves, olive oil, rosemary sprigs (leave them whole for easy removal later), salt, and black pepper. Toss everything to coat thoroughly.

Step 5

Lightly grease a medium-sized ovenproof dish with olive oil. Arrange half of the potato and onion mixture in the dish, spreading it evenly.

Step 6

Sprinkle half of the chopped parsley over the layer. Then, add the remaining potato mixture, spreading it into an even layer. Sprinkle the remaining parsley on top.

Step 7

Pour the vegetable stock over the dish evenly. This will keep the potatoes moist and enhance the flavors during baking.

Step 8

Cover the dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and bake uncovered for another 20 minutes or until the potatoes are tender and golden brown on top.
