Ingredients

  • 2 large sweet potatoes
  • 3 tablespoons brown sugar
  • 2 tablespoons unsalted butter

  • 18 pieces mini marshmallows
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 cups vegetable oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and pierce the sweet potatoes with a fork several times. Place them on a baking sheet and bake for 45-50 minutes, or until the insides are soft.
