Ingredients

  • 2 stalks fresh lemongrass stalks
  • 1 tablespoon dried jasmine flowers (mali)
  • 4 cups water
  • 2 teaspoons honey
  • 1 teaspoon lime juice
  • 6 optional (if serving iced) ice cubes

Directions

Step 1

1. Rinse the lemongrass stalks thoroughly under cold water to remove any dirt. Trim the root ends and any dry, woody parts of the stalks.

Step 2

2. Gently bruise the lemongrass stalks by using the back of a knife or a rolling pin. This helps release their natural oils and enhances the flavor.

Step 3

3. In a medium saucepan, bring 4 cups of water to a boil over medium heat.

Step 4

4. Once the water is boiling, add the bruised lemongrass stalks and reduce the heat to low. Let the lemongrass simmer for 10 minutes to steep and infuse the water with its flavor.

Step 5

5. While the lemongrass steeps, rinse the dried jasmine flowers under cold water to remove any impurities.

Step 6

6. After 10 minutes, remove the saucepan from heat. Add the dried jasmine flowers to the hot water and let them steep for an additional 3-5 minutes.

Step 7

7. Strain the tea through a fine mesh sieve into a teapot or heat-safe serving jug to remove the lemongrass and jasmine flowers.

Step 8

8. Stir in the honey and lime juice until fully dissolved.

Step 9

9. To serve hot, pour the tea into cups and enjoy immediately. To serve iced, fill glasses with ice cubes and pour the tea over the top. Stir gently and garnish with a slice of lime, if desired.
