In a bowl, combine the flour, sugar, salt, and instant yeast.
Warm the milk until lukewarm (not too hot) and melt the butter into it. Let it cool slightly.
Whisk together the egg yolks and vanilla extract, then add them and the milk-butter mixture into the dry ingredients.
Knead the dough until it is smooth and elastic, about 8-10 minutes. Cover with a clean towel and let it rise in a warm place for 1 hour or until doubled in size.
While the dough rises, prepare the filling. Soak the poppy seeds in boiling water for 20 minutes, then drain and grind them in a food processor until smooth.
Combine the ground poppy seeds with honey, raisins, nuts, and beaten egg whites in a bowl. Set aside.
Once the dough has risen, punch it down and roll it out into a large rectangle (approximately 30x40 cm).
