Ingredients

  • 500 g lamb mince
  • 2 tbsp olive oil
  • 2 tbsp pine nuts
  • 4 garlic cloves, minced
  • 1 tsp ground allspice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp lemon juice

Directions

Step 1

In a large bowl, combine the lamb mince with the minced garlic, ground allspice, ground cumin, ground coriander, cinnamon, nutmeg, ground black pepper, and salt. Mix thoroughly using your hands until the spices are evenly distributed.

Step 2

Shape the meat mixture into small sausages, about 2 inches long and 1 inch thick, placing them on a tray as you go.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the pine nuts and toast them, stirring frequently, until they are golden brown. Remove the pine nuts from the pan and set them aside.

Step 4

In the same pan, add the remaining olive oil and warm it over medium heat. Add the sausages in a single layer without overcrowding the pan. Cook for about 7-8 minutes, turning occasionally, until they are browned on all sides and cooked through.

Step 5

Once the sausages are cooked, add the toasted pine nuts back into the pan along with the lemon juice. Gently toss everything to coat the sausages with the lemon juice while being careful not to crush the pine nuts.

Step 6

Transfer the sausages to a serving platter, drizzle all the flavorful oils from the pan over them, and serve hot.
