Ingredients

  • 2 cups Fresh corn kernels
  • 3 cups Whole milk
  • 1 cup Coconut milk
  • 0.75 cup Granulated sugar
  • 0.25 cup Cornstarch
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground nutmeg (optional)

Directions

Step 1

In a blender, combine the fresh corn kernels and whole milk. Blend until smooth, then strain the mixture through a fine-mesh sieve into a large saucepan to remove any solid bits.

Step 2

Add coconut milk, granulated sugar, cornstarch, ground cinnamon, vanilla extract, salt, and nutmeg (if using) to the saucepan with the strained corn mixture. Whisk everything until the cornstarch is fully dissolved.

Step 3

Place the saucepan over medium heat and start cooking the mixture while stirring constantly with a heat-resistant whisk or wooden spoon to prevent lumps and sticking at the bottom.

Step 4

As the mixture heats, it will begin to thicken. This process will take about 20–25 minutes. Make sure to maintain a simmer and not boil the mixture to avoid curdling.

Step 5

Once the pudding reaches a thick, creamy consistency (similar to yogurt), remove it from the heat.

Step 6

Pour the Majarete into serving dishes or ramekins. Allow it to cool slightly at room temperature, then transfer it to the refrigerator to chill for at least 2 hours.

Step 7

Before serving, garnish with a sprinkle of ground cinnamon or a cinnamon stick for decoration, if desired.
