Ingredients

  • 1.75 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter
  • 0.75 cups Granulated sugar
  • 2 whole Eggs
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Lemon zest
  • 0.5 cups Whole milk
  • 1.5 cups Fresh Maine blueberries
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream the unsalted butter and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy, about 3 minutes.

Step 4

Add the eggs, one at a time, to the butter mixture, beating well after each addition. Mix in the vanilla extract and lemon zest.

Step 5

Reduce the mixer speed to low. Add the dry ingredients in three additions, alternating with the milk (beginning and ending with the dry ingredients). Mix until just combined, being careful not to over-mix.

Step 6

Gently fold in 1 cup of the blueberries with a spatula, reserving the remaining 0.5 cup for the top of the batter.

Step 7

Pour the batter into the prepared cake pan and smooth the top. Scatter the reserved 0.5 cup of blueberries evenly over the surface.

Step 8

Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then run a knife around the edges and invert the cake onto a wire rack. Peel off the parchment paper and let it cool completely.

Step 10

Dust the top of the cake with powdered sugar before serving. Slice and enjoy!
