  • 15 ounces canned cannellini beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons dried thyme
  • 1 cup small pasta shells or elbow macaroni
  • 3 cups fresh spinach, roughly chopped
  • 0.5 cup grated Parmesan cheese (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery, and cook for 5–7 minutes until the vegetables are softened.
