Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and chopped
  • 2 stalks celery stalks, chopped
  • 2 medium russet potatoes, peeled and diced
  • 1 15-ounce can canned diced tomatoes
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic cloves, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 cup frozen green beans (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon as it cooks. Drain any excess grease if necessary.

Step 3

Add the diced onion, carrots, and celery to the pot. Sauté for 5-6 minutes until the vegetables begin to soften.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the diced potatoes, canned diced tomatoes (with their juice), tomato paste, beef broth, and Worcestershire sauce to the pot. Stir well to combine.

Step 6

Season the soup with dried parsley, dried basil, salt, and ground black pepper.

Step 7

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes or until the potatoes and carrots are tender.

Step 8

If using frozen green beans, stir them in during the last 5 minutes of cooking.

Step 9

Taste the soup and adjust seasoning if needed.

Step 10

Ladle the soup into bowls, garnish with fresh parsley if desired, and serve hot.
