Ingredients

  • 1.5 cups Arborio rice
  • 6 cups Chicken or vegetable stock
  • 0.5 cups Dry white wine
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 medium Shallots (finely diced)
  • 2 cloves Garlic (minced)
  • 0.75 cups Fresh Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley or thyme (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 1 teaspoon Fresh lemon zest (optional)

Directions

Step 1

In a medium saucepan, heat the chicken or vegetable stock over medium-low heat. Keep it warm but not boiling.

Step 2

In a large, heavy-bottomed skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat until the butter melts.

Step 3

Add the finely diced shallots to the pan and sauté for 2-3 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for another 30 seconds, just until fragrant, being careful not to let it burn.

Step 5

Add the Arborio rice to the pan and cook for 1-2 minutes, stirring constantly, until the rice is slightly translucent around the edges.

Pour in the dry white wine and stir until it is almost completely absorbed by the rice.

Once the rice is cooked, reduce the heat to low and stir in the remaining 1 tablespoon of butter, grated Parmesan cheese, fresh parsley or thyme, salt, and pepper.

Taste and adjust seasoning if necessary. If desired, stir in fresh lemon zest for a bright and zesty touch.
