Ingredients

  • 2 pounds Ground beef (80% lean)
  • 0.5 pounds Ground pork
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Egg
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup Ketchup
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Dried thyme
  • 0.5 cup Ketchup (for glaze)
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let sit for 2-3 minutes to allow the breadcrumbs to absorb the liquid.

Step 3

Add the ground beef, ground pork, eggs, diced onion, minced garlic, Worcestershire sauce, ketchup, parsley, salt, pepper, and dried thyme to the breadcrumb mixture.

Step 4

Using clean hands or a mixing spoon, gently mix all the ingredients together until well combined, being careful not to overmix (overmixing can make the meatloaf tough).

Step 5

Transfer the meat mixture to the prepared loaf pan and press it down evenly, smoothing the top.

Step 6

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze. Spread the glaze evenly over the top of the meatloaf.

Step 7

Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest in the pan for 10 minutes to allow the juices to redistribute.

Step 9

Carefully transfer the meatloaf to a cutting board or serving plate. Slice and serve with your favorite side dishes, like mashed potatoes and green beans.
