Ingredients

  • 6 medium ripe tomatoes
  • 1 large red bell pepper
  • 1 medium yellow onion
  • 4 garlic cloves
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon dried basil
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 5 fresh basil leaves

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Cut the tomatoes into halves, the red bell pepper into quarters (remove seeds), and the onion into large wedges. Place them on the prepared baking sheet along with the garlic cloves (leave them unpeeled).

Drizzle the vegetables with olive oil and sprinkle a pinch of salt and pepper over them. Toss to coat evenly.
