  • 10 leaves Curry leaves
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 2 tablespoons Tamarind pulp
  • 200 milliliters Coconut milk
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Fresh coriander leaves (chopped)

Directions

Step 1

Heat the cooking oil in a heavy-bottomed pan on medium heat.

Add the mustard seeds and let them splutter. Then add curry leaves, stirring for a few seconds.

Add the chopped onion and sauté until golden brown, about 7-8 minutes.

Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.

Add the chopped tomatoes and cook until they soften and the oil begins to separate, about 10 minutes.
