Ingredients

  • 500 grams Shrimp (peeled and deveined)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 10 leaves Curry leaves
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 2 medium Tomatoes (chopped)
  • 2 teaspoons Madras curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1.5 teaspoons Coriander powder
  • 400 milliliters Coconut milk
  • 150 milliliters Water
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 Lime (for garnish)

Directions

Step 1

Heat the vegetable oil in a large pan over medium heat.

Step 2

Add mustard seeds and let them splutter. Then add curry leaves and sauté for 30 seconds until aromatic.

Stir in the chopped onions and sauté for 5-7 minutes until golden brown.

Add the minced garlic and grated ginger. Cook for 1-2 minutes until the raw smell disappears.
