  • 200 g unsalted butter
  • 200 g caster sugar
  • 3 large eggs
  • 200 g self-raising flour
  • 50 g plain flour
  • 50 ml whole milk
  • 1 large lemon zest
  • 5 tbsp lemon curd
  • 2 tbsp powdered sugar

Directions

Step 1

Preheat your oven to 170°C (340°F) or 150°C (300°F) for a fan oven. Grease and line a 1kg (2lb) loaf tin with parchment paper.

In a large mixing bowl, beat the unsalted butter and caster sugar together until pale and fluffy. This should take about 3-5 minutes using an electric hand mixer.
