Ingredients

  • 4 ears Fresh corn on the cob
  • 2 tablespoons Olive oil
  • 1 teaspoon Sweet paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley
  • 1 whole Fresh lemon wedges

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Peel back the husks of the corn without removing them and discard the silk. Pull the husks back up to cover the corn and soak the ears in a bowl of water for 10 minutes to prevent burning on the grill.

Step 3

In a small bowl, mix together the olive oil, sweet paprika, garlic powder, dried oregano, salt, and black pepper.

Step 4

Remove the corn from the water and shake off excess moisture. Pull back the husks again and generously brush the corn kernels with the seasoned olive oil mixture using a basting brush.

Step 5

Pull the husks back up around the corn and place the cobs on the grill.

Step 6

Grill the corn for 10-15 minutes, turning frequently, until the kernels are tender and slightly charred. If you want more char, remove the husks in the last few minutes of grilling and place the corn directly on the grates.

Step 7

Remove the corn from the grill and let it cool slightly. Sprinkle with chopped fresh parsley for garnish.

Step 8

Serve the corn with fresh lemon wedges for squeezing over the top before eating.
