  • 400 grams macaroni pasta
  • 3 tablespoons unsalted butter

  • 500 milliliters whole milk
  • 120 milliliters heavy cream
  • 150 grams blue cheese (crumbled)
  • 50 grams shredded Parmesan cheese
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons salt
  • 50 grams breadcrumbs
  • 30 grams extra blue cheese for topping (optional)
  • 1 tablespoon olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.

In a medium-sized saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until a smooth paste forms (this is your roux).
