Ingredients

  • 250 grams Soba noodles
  • 75 grams Macadamia nuts
  • 3 tablespoons Sesame oil
  • 2 tablespoons Soy sauce
  • 1.5 tablespoons Rice vinegar
  • 1 tablespoon Honey (or maple syrup for vegan option)
  • 1 unit Garlic clove, finely minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Water
  • 2 teaspoons Toasted sesame seeds
  • 2 units Green onions, thinly sliced
  • 1 unit Carrot, julienned
  • 1 unit Red bell pepper, thinly sliced
  • 2 tablespoons Cilantro leaves, chopped (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually 4-5 minutes, until tender. Drain and rinse under cold water to stop cooking. Set aside.

Step 2

To make the macadamia sesame sauce, toast the macadamia nuts in a dry skillet over medium heat until lightly golden and fragrant, about 3-4 minutes. Be careful not to burn them. Let the nuts cool.

Step 3

In a blender or food processor, combine the toasted macadamia nuts, sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and water. Blend until smooth and creamy. Adjust the consistency with more water if needed.

Step 4

In a large mixing bowl, combine the cooked soba noodles, julienned carrots, sliced red bell pepper, and half the green onions. Pour the macadamia sesame sauce over the noodles and vegetables, tossing gently to coat everything evenly.

Step 5

Transfer the noodles to a serving dish. Garnish with toasted sesame seeds, the remaining green onions, and chopped cilantro if desired.

Step 6

Serve immediately at room temperature or chilled. Enjoy your Macadamia Sesame Soba Noodles as a main dish or a side to complement your meal.
