Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Macadamia nuts
  • 0.5 cup Breadcrumbs
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the macadamia nuts in a food processor and pulse until finely chopped, but not powdered. Transfer to a shallow dish and mix with the breadcrumbs.

Step 3

In a separate shallow dish, place the flour and mix in salt, black pepper, and garlic powder.

Step 4

In a third shallow dish, whisk together the eggs and milk until combined.

Step 5

Pound the chicken breasts to an even thickness (about 1/2 inch) using a meat mallet or rolling pin under plastic wrap.

Step 6

Dredge each chicken breast first in the flour mixture, shaking off the excess, then dip into the egg mixture, and finally press into the macadamia nut and breadcrumb mixture to coat evenly on all sides.

Step 7

Heat the olive oil and butter in a large oven-safe skillet over medium heat.

Step 8

Place the coated chicken breasts in the skillet and cook for 2-3 minutes per side, or until golden brown.

Step 9

Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 10

Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Step 11

Serve warm with your choice of side dishes, such as steamed vegetables or a fresh garden salad.
