  • 170 grams unsalted butter (softened)
  • 100 grams granulated sugar
  • 250 grams all-purpose flour
  • 1 teaspoon salt
  • 150 grams light brown sugar (packed)
  • 60 milliliters honey
  • 60 milliliters heavy cream
  • 200 grams macadamia nuts (coarsely chopped)
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x9-inch (23x23 cm) baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium bowl, cream together 170 grams of softened unsalted butter and 100 grams of granulated sugar until light and fluffy.

Step 3

Gradually mix in 250 grams of all-purpose flour and 1 teaspoon of salt until a dough forms. Press the dough evenly into the prepared baking pan to form the crust.

Step 4

Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly while you prepare the filling.

Step 5

In a medium saucepan over medium heat, combine 150 grams of light brown sugar, 60 milliliters of honey, and 60 milliliters of heavy cream. Cook, stirring occasionally, until the mixture comes to a boil.

Step 6

Once boiling, reduce the heat to low and simmer for 2 minutes. Remove from heat and stir in 200 grams of coarsely chopped macadamia nuts and 1 teaspoon of vanilla extract.

Pour the macadamia filling evenly over the pre-baked crust, spreading it out with a spatula if needed.

Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is bubbling and golden brown.

Remove the bars from the oven and let them cool completely in the pan. Once cool, use the parchment paper overhang to lift the bars out of the pan.
