Ingredients

  • 240 ml Fresh lemon juice
  • 240 ml Water
  • 200 g Granulated sugar
  • 15 g Gelatin powder
  • 60 ml Cold water
  • 1 tbsp Lemon zest
  • 1 pinch Pinch of salt

Directions

Step 1

Begin by placing the gelatin powder in a small bowl. Add the cold water over the gelatin and let it bloom for about 5 minutes. The gelatin will absorb the water and become thick.

In a medium saucepan, combine the fresh lemon juice, water, and granulated sugar. Stir well to combine.

Place the saucepan over medium heat and add the lemon zest and a pinch of salt. Stir continuously until the sugar dissolves completely and the mixture is heated through, but not boiling, which should take about 3 to 5 minutes.
