Remove the outer leaves of the cabbage and cut it into quarters. Remove the core from each quarter.
Using a sharp knife or a mandoline, finely shred the cabbage into thin strips.
Peel and grate the carrots using a box grater or a food processor.
Peel the onion and slice it into very thin rings.
In a large bowl, combine the shredded cabbage, grated carrots, and sliced onions.
